Zucchini Oven Chips

A different take on zucchini designed to appeal to the person who normally doesn't like zucchini or other types of squash! These can be served as an appetizer, or as an accompaniment to your main course.

  • 1/4 cup penko or dry breadcrumbs
  • 1/4 cup grated parmesian cheese
  • 1/4 tsp salt
  • dash of freshly ground pepper
  • 1 large zucchini
  • 1/2 cup milk (fat free OK)
  • Cooking Spray (PAM)

Preheat oven to 425°.
Combine all the dry ingredients in bowl and mix.
Pour milk into another small bowl.
Wash and slice (don't peel) the zucchini (about 1/4 inch each).
Dip each slice in the milk, then into the bowl with the dry ingredients to coat both sides.
Spray a wire cooking rack with PAM and place over a baking sheet.
Placed coated slices of zucchini on wire rack.
Place in oven for about 25-30 minutes.
Remove and serve immediately.
Serves 4.
