Greek Watermelon Salad

The basic idea came from an Athenos Feta Cheese advertisement in a cooking magazine. This is a great summer salad which is easy to put together....great for a larger group, just increase the proportions accordingly.

Greek Watermelon Salad

serves 4

INGREDIENTS:

  • 3 cups cubed watermelon
  • 1 1/2 cup cucumber cut slightly smaller than the watermelon
  • 1/2 cup crumbled feta cheese
  • 2 tbsp chopped mint leaves
  • 2 tbsp of any balsamic based salad dressing (Paul Newman's Light Balsamic Dressing is my favorite).
  • A pinch of S&P if you like.

METHOD:

Mix it all together and serve.

CHEFS NOTE: Ensure the melon and cucumber is chilled.
