Linguine Con Vongole - Linguini with clams

A different twist on the classic..we add additional good stuff
to keep the clams happy (molto felice).

You will need:
- 1/4 cup olive oil
- a small can of chopped clams (6 1/2 oz)
- 2 tbs chopped garlic
- 1/4 cup chopped onions
- 1/4 cup chopped mushrooms
- 1/4 cup chopped black olives
- 1/4 cup chopped tomatoes
- handful of arugula.
- linguini pasta


Just begore serving..put arrugala in at last moment

Heat olive oil in skillet over moderate heat; add chopped garlic.
Reserve the liquid and add the chopped clams.
add chopped onions
add chopped mushrooms and 1/4 cup chopped black olives (canned OK).
add chopped tomatoes
add a small handful of chopped arugula
Reduce heat and stir for several minutes
OPTIONAL: Thin out the sauce a bit with the reserved clam juice if you prefer a "thinner"sauce. Adding one TBS of butter at this point will bind everything together guaranteeing a rich sauce, but its optional!
then pour over pre-cooked linguini, season with S&P and serve immediately.


TIP: Use whole wheat linguini or spaghetti.
VARIATIONS: OK to substite fresh spinach for the arugula; try sundried tomatoes instead of fresh; try adding a handful of pinenuts or chopped walnuts as the mixture cooks
