Susie's Marinara Sauce

Simple to make ....a very delicious tomato sauce.
There are many recipes for marinara and some get pretty complicated. This ones goes back to the basics: tomatoes, onions, garlic and olive oil.

  • 10 tbs olive oil
  • 1 finely choped small onion
  • 5 minced garlic cloves
  • 28 ounce can of whole peeled tomatoes
  • 2 tsp salt
  • 1/2 tsp Red Pepper flakes
  • Fresh basil

Place tomatoes and about half the liquid from the can in food processor and puree.
Saute the chopped onion in the olive oil.
Add the minced garlic.
Add the pureed tomatoes, salt and pepper flakes
Simmer for a minimum of 20 minutes (longer is OK)
Add a small handful of basil just before serving.

Chiffonade the Basil

NOTE: Instead of simply chopping the basil, try the classic "chiffonade" technique:
Take 8 or so leaves and pile 1 leaf on top of another, the largest leaf on the bottom.
Roll the leaf wad into a tight roll, starting from side to side.
With a very sharp knife, carefully slice the leaf wad into 1/16- to 1/8-inch pieces, as if you
were cutting a jelly roll. The result is a pile of basil "strips" which will add wonderful flavor, texture, and color to your sauce.
