Totally Spiced Shrimp

During the quarantine days in 2020, Pauline and Tina came across this recipe in Food Network Magazine. The recipe included "everything seasoning", but the girls didn't know what that was so they searched for and found a version they could put together in another food magazine using ingredients that we already had on hand. Usually we would combine shrimp with pasta, but this one calls for small potatoes and, married to the cream cheese, becomes a fantastic "all-in-one" meal.

INGREDIENTS

  • 1 1/4 pounds peeled and deveined large shrimp.
  • 1 1/4 pounds small red potatoes, quartered with a pinch of kosher salt
  • 4 cups small broccoli florets
  • 6 ounces (heaping 2/3 cup) chive-onion creme cheese.
  • Ground pepper
  • 1 tbsp olive oil
  • 2 tbsp of the girl's seasoning (see below)
  • 2 tbsp butter, unsalted preferred.
  • 2 tbsp fesh chopped chives

EVERYTHING SEASONING

  • 1 1/2 tsp kosher salt
  • 1 tbsp poppy seeds
  • 1 tbsp sesame seeds
  • 1 tbsp dried minced garlic
  • 1 tbsp dried minced onion

METHOD

1. Put the potatoes in a large pot, cover with water by 2 inches and season generously with salt. Bring to a boil, then reduce the heat and simmer until the potatoes are tender when pierced with a knife, 12 to 15 minutes. Add the broccoli and cook until bright green and crisp-tender, about 1 more minute. Reserve 3 tablespoons cooking water, then drain the potatoes and broccoli.

2. Stir the cream cheese and reserved cooking water in a large bowl until smooth. Add the potatoes and broccoli and toss until evenly coated. Season with salt and pepper.

3. Toss the shrimp with the olive oil and everything seasoning in a medium bowl. Heat a large nonstick skillet over medium-high heat until very hot. Add the butter and let melt. Add the shrimp in a single layer and cook, turning halfway through, until browned, 3 to 4 minutes.

4. Stir the chives into the potato mixture. Divide the potato mixture and shrimp among plates. Sprinkle with more everything seasoning..

CHEF's NOTES:

  • Although this recipe calls for "uncooked" shrimp, you can just as easily add the pre-cooked, ready to eat variety. Simply change the step 3 procedure above to reduce the cooking time of the shrimp from 3-4 minutes to 30-40 seconds.
