SPAGHETTI SQUASH GRATINEE

  • 1 lg squash
  • 9 fresh sage leaves
  • 1 garlic clove
  • Heavy crème 3/4 cup
  • 2 1/4 cups grated Swiss Gruyere Cheese (divided use)
  • salt & pepper

This should make 10 servings; if using a smaller squash, reduce the other ingredients proportionately

Cook squash, scrape out spaghetti shreds into bowl with a fork
Chop 6 of the sage leaves into the squash and toss with the garlic, 2 cups of cheese, crème and S&P.
Place in a casserole dish so that the mixture is about 1 inch deep.
Sprinkle remainder of cheese on top and place the 3 maining sage leaves on top as garnish.
Bake at 375 for 35-45 minutes
Grind some black pepper over the top to finish and serve immediately.
