Herb Rolls

From a Chef Bradley Ogden creation. These are wonderful and very easy to make! I've amended the original resipe by utilizing buttermilk in place of milk, which I think adds a truly unique and subtle flavor to the bread!

  • 1 package active dry yeast (about 1 tbsp.)
  • 3 tablespoons sugar
  • 1 teaspoon salt
  • 1 tablespoon minced parsley
  • 1 tablespoon minced fresh dill
  • 1 tablespoon minced chives
  • 1 tablespoon minced rosemary
  • 2 tablespoons melted butter
  • 1 large egg plus 1 tbsp. lightly beaten egg, divided
  • 1 cup milk buttermilk ( or milk can be used)
  • 3 1/2 to 3 3/4 cups all-purpose flour
  • About 1 tbsp. coarse salt
 

1. In a large bowl, sprinkle yeast over 1/4 warm cool (70°) water with 1 tsp sugar added. Let stand until dissolved, 5 minutes. Then add in 3 tbsp sugar, table salt, herbs, butter, whole egg, and milk; add 3 1/4 cups flour and stir to moisten.

2. Knead dough on a lightly floured board for 10-15 minutes until it is elastic and not sticky......... add flour as needed to prevent sticking. Shape into 12 -14 equal balls; place in a well-buttered 9- by 13-in. oven proof dish, or divide into 2 smaller ovenproof dishes.

3. Let dough rise in a warm place until doubled, 45 to 60 minutes. Meanwhile, preheat oven to 350°.

Brush rolls with beaten egg and sprinkle with coarse salt. Bake until deep golden, 25 to 30 minutes.

Buttermilk Whole Wheat Honey Rolls

Wholewheat/Honey varaiation

A variation of the above recipe that substitutes the various herbs with a bit of whole wheat flour and a taste of honey. Since the whole wheat flour is denser than the regular flour, the total amount of flour is a bit less than the previous recipe.

After the yeast has fermented for 5 minutes, add 2 cups of all purpose flour and 1 cup of whole wheat flour. Sunstitute the 3 tbsps of sugar with an equal measure of honey. Skip the herbs and continue with the instructions above. Instead of brushing the rolls prior to baking with beaten egg and course salt, try simply using a bit of melted butter for a different look and taste.
