Puff Pastry Tomato & Cheese Tart

These recipes abound on-line and I have experimented with a few. ..This one is a variation of several of the better ones sampled. Its pretty simple to put together, presents well and is "delicious"!

Tomato Tart

INGREDIENTS

  • 1 package puff pastry (find in the freezer section)
  • 1 cup pesto sauce
  • Small bunch of spinach, washed and torn into pieces
  • 1 - 2 cups Feta cheese (amount depends on your taste)
  • 2 cups grape tomatoes..each one cut in half.

METHOD

Remove Puff Pastry from freezer several hours before: let it thaw to room temp.

Preheat oven to 425 degrees
The Puff Pastry box will contain 2 sheets; remove them from box, unfold and place on a greased baking sheet (or better yet, on top of a sheet of baking parchment paper). Using a knife, score a 1/2 inch boder around the sheet as shown...don't cut all the way through!
Spread half the pesto, as shown, on each sheet.
Then add the spinach, followed by the tomatoes and feta.
Bake for about 20 minutes, or until the edges are golden brown and puffed up.

CHEF's NOTES:

  • You can substitute the Feta for another type of cheese. You can also drizzle a very small amount of olive oil over the top just before putting into the oven and there is nothing wrong with adding some fresh ground pepper.Try to keep all ingredients within the confines of the inner score marks..
