Crispy Grated Potato Pie with Italian Sausage and Spinach

Something new...something different. Easy to put together and really yummie!. Serve it for breakfast, lunch or dinner.

Potato pie with Italian sausage and spinach

INGREDIENTS

  • 5 medium size potatoes
  • 3 eggs
  • S&P
  • 10 oz italian sweet sausage (about 2 1/2 links from a 19 oz package).
  • Handfull of fresh spinach
  • 3-4 green onions.chopped (include some of the green stem)
  • 1 tsp minced garlic
  • 2 tsp oregeno
  • 1/4 cup grated mozzarella
  • 4 or 5 small mozzarella balls
  • 1/4 grated parmesan
  • 1/4 chopped fresh parsely
Putting together the potato crust

METHOD

→ Peel the potatoes then grate them into a large bowl...add S+P to taste plus 1 tsp oregeno.

→ Submerse the potato mixture in cold water..let sit for 15 minutes.

→ After 15 minutes, completely drain all the water from the grated pototoes. Add 3 eggs, 1 oz oregeno, 1/4 cup grated parmesan and the parsely. S+P to taste, mix well.

→ Pre heat oven to 425 degrees.

→ Loosely cover a 10 inch frying pan or oven proof cake/pie pan or casserole dish with parchment paper. Spray it with pam or brush oil over the surface.

→ Carefully add the potato mixture to the pan, spreading it across the bottom and molding it up the sides to mimic a pie shell.

→ Place the pan in a 425 degree oven and cook for about 30 minutes, or until lightly golden brown, Remove and set aside..

→ While the potato crust is being baked, heat 1tbs olive oil in a fry pan to medium and add sausage, cut into small bite size chunks. After several minutes add the chopped onions, remaining oregeno and garlic. Cook for another few minutes then temporarilly transfer contents to a small bowl or dish.

→ In the same pan add another tbs olive oil and the spinach (enough to fill the pan). Cook over med heat BRIEFLY until just wilted. Remove from heat and combine with the sausage/onion mixture.

→ Transfer the sausage/onion/spinach mix to the potato pie shell, keeping the parchment paper intact.

→ Sprinkle the grated mozzarella over the top and add 4 or 5 of those small salad size mozzarella balls you find in the deli section.

→ Return pan to oven and bake for 10 minutes or until those cheese balls have melted.

→ Remove from oven and carefully transfer the pie from the parchment paper mold onto a serving dish.

Fill it up!

CHEFS NOTE:
Make this a veggie dish by substituting the sausage for sliced fresh mushrooms.
