SPINACH and GORGONZOLA PIZZA


Use pre-packaged pizza dough mix...preferably whole wheat.
Prepare dough as directed.
Preheat oven to 400 degrees.
Lightly oil a pizza pan-spread dough.
Briefly sautee MINCED GARLIC in a few tbl of OLIVE OIL.
Add SPINACH LEAVES (a big bowl full) to the oil and cook for about 3 minutes until wilted.
Add some sliced GOLDEN BELL PEPPER to the oil and briefly sautee...set aside.
Spread a thin layer of TOMATO SAUCE over the pizza dough.
Layer with the wilted spinich leaves.
Add bell peppers, perhaps some sliced SUNDRIED TOMATOES and SCALLIONS.
Sprinkle with GORGONZOLLA cheese...not too much.
Ok to also add some grated PARMESAN CHEESE...add GROUND PEPPER.
Bake for about 20 minutes, or until bottom of pizza is golden.
