Pappardelle con Pancetta(Italian for: Died and Gone to Heaven :) Apr 21, 2019 - Serves 2-3INGREDIENTS
PREPARE Bring several quarts of water to boil. Add the pasta and cook for about 12 minutes. While the pasta is boiling, melt the butter and olive oil in a pan over medium high heat and then add the pancetta and cook, swirling pan, until fully cooked (about 3 minutes). Add the onions and garlic and cook for 2 more minutes Lower the heat to med low and add the peas and tomatoes followed by the creme. Simmer it all for a minute or two, then add most of the cheese.. With tongs, transfer the pappardelle to the pan and toss (no need to strain, a little water will help the sauce). Add pasta mixture to your plates sprinkling the remaining parmesan over the top along with your parsely or basil garnish.
