Pappardelle con Pancetta

(Italian for: Died and Gone to Heaven :)

INGREDIENTS

  • About 8-10 strands of pappardelle pasta.
  • 1 package diced pancetta..about 5 ounces.
  • 1 - 2 tbsp extra virgin olive oil
  • 1 tbsp butter
  • 1/4 cup heavy creme
  • 1/4 cup grated parmesan cheese
  • 1/4 cup peas
  • 1/4 cup diced onions
  • 1 tsp crushed garlic
  • 1/4 cup chopped tomatoes
  • parsely or chopped sweet basil and S&P to garnish

PREPARE

Bring several quarts of water to boil. Add the pasta and cook for about 12 minutes.

While the pasta is boiling, melt the butter and olive oil in a pan over medium high heat and then add the pancetta and cook, swirling pan, until fully cooked (about 3 minutes).

Add the onions and garlic and cook for 2 more minutes

Lower the heat to med low and add the peas and tomatoes followed by the creme.

Simmer it all for a minute or two, then add most of the cheese..

With tongs, transfer the pappardelle to the pan and toss (no need to strain, a little water will help the sauce).

Add pasta mixture to your plates sprinkling the remaining parmesan over the top along with your parsely or basil garnish.

 


CHEF's NOTES:

  • Some folks like to add a tbsp of salt to the boiling water. You can substitute your favorite grated cheeses for the parmesan..
