CHICKEN BREASTS WITH ORANGE SAUCE

Chez B Orange Chicken - 4 chicken breasts
- 1/4 tsp salt
- 1/3 cup flour
- 4 tbs olive oil
- 1/3 cup finely chopped green onions
- 1/4 cup white wine
- 3/4 cup orange juice
- 3 tbs balsamic vinegar
- 1 peeled orange or 2 peeled tangerines, sections separated
- 2-3 tlbs chopped parsely

Sprinkle chicken with salt, dredge in flour, shake off excess.
Heat olive oil over moderate heat.
Brown chicken; about 3 minutes per side.
Remove chicken.
Lower heat...add onion to pan, cook for 5 minutes.
Add wine, scrape pan to loosen leftover chicken bits.
Simmer for several minutes then add vinegar, orange sections and juice.
Place chicken back in pan
Bring to boil then reduce heat to low and cover.
Simmer for 15 minutes. Stir in parsely.
