KEY LIME PIE
This is Tina's recipe, and it is the BEST (especially when the limes come from your own backyard tree!)

- One store bought graham craker pie crust (8-9")
- 2 eggs
- 1 egg yoke
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup lime juice
- 2 tbs water
- 1 tsp grated lime peel
Whisk eggs until combined
Gradually add milk to the egg mixture, beating until combined.
Add juice, water and lime peel.
Whisk until well blended.
Pour mixture into the crust.
Bake at 350 for 20 minutes.
Cool on wire rack for 1 hour
CHEFS NOTE:
I like to garnish with strips of lime skin that I've taken from a lime with a peeler...sliced thinly and cooked for several minutes in a solution of 1/4 cup sugar and 1/4 cup water thats at the boil for several minutes. remove the peels and shaped to your liking.
