Karrot Kake

Tina's Carrot Cake is the best thing going. But if you want the next best thing with a lot less work, have I got the solution for you. We start with a store bought box (any brand will work) of Carrot Cake mix and a store bought tub of Creme Cheese frosting. Below you see the basic concept...we amend the cake mix and the frosting to approximate a professionally make carrot cake

INGREDIENTS

  • 1 box Carrot Cake mix
  • 1 tub of Whipped Creme Cheese frosting
  • about 3 carrots
  • about 1/2 cup chopped pecans
  • 8 oz tub of whipped creme cheese
  • 1 serving container from a 6 or 8 count package of Pinaeapple tidbits in juice.

PREPARE

Mix the boxed cake ingredients as directed but DO NOT add any water.

Grate about 3 carrots to get enough to fill 1 cup and add to the mix.

Add the pecans.

Mince the pineapple bits to a pulp and add to the mixture along with all the juice in the container.

Place in cake pans and bake as directed on the box.

Meanwhile combine the Frosting mix with the entire tub of Whipped Creme Cheese.

Let the cake cool, then place in refer for 10 minutes to get it really cool and firm (easier to put the frosting on nicely).

 


CHEF's NOTES:

  • Most boxed recipes have you adding eggs, oil and water. The water is NOT necessary since the juice in the pinapple cup and the grated carrots adds a sufficient amount of moisture. Walnuts can be substitued for the pecans. I find that most store bought Creme Cheese frostings are too sweet. By adding the tub of whipped creme cheese, with NO additional sugar, we bring the sugary taste down and the creme cheese taste up! Plus, I find that a regular tub of store bought frosting is barely adequate to frost an 8 inch dual layer cake (don't you hate that!); but now we end up with more frosting to do a proper job. And the same goes for the pineapple container, sugar free is best! Perfect!
  • You can decorate the top of the cake with Candied Carrot Strips. Using your peeler or a mandolin, slice the carrots lengthwise and drop in a pan of boiling sugar water (1 part sugar and 1 part water) and cook for 20 minutes. Remove and wrap them around the handle of a wooden spoon to form a spiral effect and let cool. Sprinkle with sugar. Cool!
