INGREDIENTS

  • 2 thick cut pork chops
  • 4 tbsp olive oil
  • 1 tbsp butter
  • 2 tsp chopped parsely
  • 4 tbsp honey
  • 1 tbsp dijon mustard or similar
  • 2 tbsp apple cider vinegar (plain apple cider/juice or even white wine can be substituted).
  • S&P

METHOD

Heat the oil and butter over med high heat and add the chops. Cook for 3 muinutes each side. S&P to taste.

Turn on oven broiler

Mix the honey, mustard and vinagar together.

After 6 minutes, remove the chops to a separate plate, turn off the heat on the pan and add the honey-mustard mix to the pan, stir a bit, then replace the chops in the pan ensuring that the bottoms get a good coating of the honey-mustard mix, then turn them over.

Place the pan with the chops under the broiler for between 1-2 minutes; when the chops start to sizzle and brown, remove and serve. Add parsely as garnish.

CHEF's NOTES:

  • Many variations of this recipe use chopped garlic instead of mustard = Honey Garlic Pork Chops!
  • I prefer to use the bone-in chops, but its not necessary. The important thing is that they be thick.
