Golden Chicken

A luxurious golden sauce, infused with the vibrant hues of turmeric and Dijon mustard, elevates this exquisite and flavorful chicken dish to a new level of culinary sophistication. My variation of a classic recipe from the files of Bon Appetit magazine.

Golden Chicken

INGREDIENTS

  • 1 tbs flour
  • 1 1/2 tsp ground tumeric (divided)
  • 4 pieces of chicken (legs and thighs)
  • 3/4 tsp kosher salt
  • 1 tbs honey
  • 4 tbsp oil (divided)
  • 4 garlic cloves
  • 1 cup heavy creme
  • 2 tbsp dijon mustard
  • 1 tsp ground pepper
  • Several sprigs of thyme or1/2 tsp ground thyme.

METHOD

→ Pre heat oven to 375.

→ In a small bowl, mix the flour and 1 tsp of the tumeric and 1/4 tsp of the kosher salt. Sprinkle the mixture over the chicken pieces.

→ Heat 2 tbsp oil in a a medium-large pot to medium high and add the chicken. Cook for about 5 minutes then turn over for another 5 minutes. Your looking to get a nice golden sheen to the chicken skin.

→ Transfer the chicken pieces to a separate plate and set aside.

→ Reduce the pan heat to medium and add the rest of the oil (2 tbs). Add the shallots and garlic and cook for 3-4 minutes. Then add the creme, dijon mustard, pepper, thyme and remaining kosher salt (1/2 tsp) and remaining tumeric (1/2 tsp).

→ Bring to a simmer then add the chicken pieces to the pan.

→ Transfer the pan to the oven and cook until an instant read thermometer reads 160 degrees in the thickest part of the chicken (about 30 minutes).

→ Remove pan from oven and let sit a few minutes before serving.

    CHEFS NOTE:
    (1) Chopped onions can be substituted for the shallots..ensure they are very finely chopped and use 1/8 - 1/4 cup depending on your taste.
    (2) An equivilant amount of minced garlic from a jar can be used instead of the shallots.
