Kelly's "Strawberry" Cupcakes

Kelly's variation of a Strawberry Cake recipe....the strawberries make it super moist. Add to it the creme cheese frosting and you have a cupcake "to die for".

Makes about 30 cupcakes.

    CUPCAKES
  • 1 box white cake mix
  • 1 box strawberry-flavored instant gelatin (3 ounce)
  • 1 (15 oz) box strawberries in syrup, thawed and pureed
  • 4 large eggs
  • 1/2 cup vegetable oil
  • 1/4 cup water
    CREME CHEESE FROSTING
  • 1/2 cup butter (1 stick) at room temperature
  • 8 oz Philly creme cheese (1 package), room temperature
  • 2+ cups powdered sugar
  • 1 tsp vanilla extract

CUPCAKES
Preheat oven to 350 degrees. Lightly greese cupcake molds.

In a large bowl, combine cake mix and gelatin. Add pureed strawberries, eggs, oil, and water; beat at medium speed with an electric mixer until smooth. Pour into cupcake molds, and bake for 15-20 minutes, or until a wooden pick inserted in the center comes out clean.

Let cool in molds for 10 minutes. Remove from molds, and cool completely on wire racks.

CREME CHEESE FROSTING
With an electric mixer, mix the butter and cream cheese together, about 3 minutes on medium speed until very smooth. Scrape down the sides and bottom of the bowl to ensure even mixing.

Add the vanilla extract and mix. Slowly add the powdered sugar. Keep adding until you get to desired sweetness and thickness.

Either spread on with a blunt knife or spatula, or spoon into a piping bag to decorate your cupcakes.

OPTIONAL:
Dress it up with
some fresh slices of
strawberry and mint leaves.
