"Baked Corn"

Very easy to make - wonderful flavor and texture. This one always gets "rave" reviews at Chez Beresky!

  • 1 cup milk.
  • 2 Tb butter
  • 1Tb sugar
  • 2 Tb flour
  • 1 15-oz can of corn
  • 2 eggs - well beaten
 

Grease or spray PAM onto a 1- to 1.5-quart Pyrex loaf pan. Boil 3/4 cup milk with butter and sugar. Dissolve flour in 1/4 cup milk. Pour flour mixture into milk mixture and simmer/stir over low heat for several minutes to make a thin white sauce. Add drained corn to pyrex dish and cover with the sauce. Mix in eggs. Bake 50 minutes at 400F.
Serves 4-5 ; double recipe for a serving of 10.
