Charlene's FANTASTIC Buttermilk Pork Chops

Everyone who has tried these agrees that they are the MOST TENDER pork chops they have ever had! Tim and Charlene happened upon this one on a recent trip to Charleston, S.C.

METHOD

Buy the best chops available, bone-in.. Charlene's suggests Costco Rack of Pork (available holiday time only) cut up in chops and pounded to about 1/2 In thick.

In a large bowl soak 24 to 48 hrs in buttermilk w generous squirts of Serachi hot sauce, avail anywhere including Trader Joes.. Shake off excess buttermilk after bringing to room temp and dredge in panko crumbs seasoned with any favorite seasonings...."mo hotta mo betta"

Fry in peanut, Canola or favorite high temp veg oil till golden brown on both sides... If too rare and getting to dark put in ovenproof platter and place in 350 oven for up to 20 minutes depending on your liking.

Must be served with very fattening mashed potatoes to really count.
