Bruschetta: a different take!

Bruschetta is a wondeful appetizer and I've seen many variations ... some good, some not so good! My version discards the bread and substitutes tortillas, which makes for a lighter and more interesting, I think, appetizer. We simply cut small tortillas into rectangles as shown in the diagram and top with wonderful stuff!

METHOD: Use the smaller diameter tortillas; each one will be cut into 2 rectangular sections as shown below.
Brush each side with a little olive oil
At this point you simply use your imagination to create the bruschetta.
EXAMPLE: Spread a very thin layer of pesto sauce over each tortilla strip, add thinly chopped tomatoes, some arugula, top with parmesan cheese and drizzle a few drops of olive oil over the top.
or, add very thinnly sliced prosciutto, or bits of pre-cooked chopped bacon or pancetta, then top with a bit of mozzarella then a bit of olive oil.
You get the picture! Don't forget to season with some S&P.
Place on a non stick baking sheet and cook for 9 minutes in a 425 degree oven.
