Tzatziki

From Nan's kitchen, a delicious Greek inspired "Garlic Yogurt Cucumber Sauce". You can find many recipes on-line or from various cookbooks. Nan has taken her favorite recipe and added her own touch. Wonderful accompanment for crcakers or fresh veggie appetizers, but its real marriage is with Greek flat-bread, or pita.

Tzatziki Sauce

INGREDIENTS

  • 1/2 seedless, peeled cucumber
  • 1 tsp salt, plus or minus to taste.
  • 2 cups PLAIN Greek Yogurt.
  • 3 garlic cloves, peeled and mashed.
  • 1/3 cup high quality olive oil
  • 1 tbs red or white wine vinagar
  • 1 tbs fresh minced dill

PREPARE

Coursely grind the cucumber using a grater or food processor and add 1/2 tsp of the salt.

Place the grated cucumber in a fine mesh sieve set over a bowl and drain for 10 minutes.

Working in batches, add a handful at a time squeezing as much of the remaining water from the cucumber as possible - transfer to a bowl.

Add the remaining ingredients including 1/2 tsp of the salt and mix well

Refrigerate for at least an hour before serving.

 


CHEF's NOTES:

  • Nan suggests making the Tsatziki the day before and let it sit in the refer overnight to allow all the flavors to completely belnd and come alive..
