|     SPAGHETTI SQUASHSpaghetti Squash, well, looks like spaghetti once its cooked and removed from the outer thick layer of skin. We cook the squash, remove the spaghetti strands with a fork, mix it with good stuff, and reheat it back inside the shell...neat!

 1 spaghetti squash 1 large zucchini1/4 cup spaghetti sauce or tomato sauce (or salsa if you want to "kick it up a notch")1/4 cup or more grated Parmesan cheese optional:  1/8 cup of diced tomatoes and 1/8 cup sliced mushrooms   Slice  spaghetti squash in half without damaging stem; remove seeds. Place both halves in casserole dish with 1/4 cup water, cover with plastic wrap, microwave for 10 min. Remove strands of squash with fork after its been cooked. (The longer its cooked, the more strands you get)!
 Mix equal amounts of shredded zucchini with the cooked squash.
 Add  tomato sauce.
 Add cheese.
 optional: Add  chopped tomatos and (or)  mushrooms
 Place mixture back in the original casserole dish and bake at 350 degrees for 20 minutes.
 Remove cooked mixture to the squash cavity section that retained the stem.
